Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup melted butter
  • 1/4 cup sugar
  • 24 oz cream cheese
  • 1 cup sugar
  • 3 large eggs
  • 1/2 cup amaretto liqueur
  • 1 teaspoon almond extract
  • 1/2 cup toasted sliced almonds

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a medium bowl, combine the graham cracker crumbs, melted butter, and 1/4 cup of sugar. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  3. In a large mixing bowl, beat the cream cheese until smooth. Gradually add in 1 cup of sugar and mix until creamy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Mix in the amaretto liqueur and almond extract until fully combined.
  6. Pour the cheesecake batter over the prepared crust, smoothing the top with a spatula.
  7. Bake for about 60-70 minutes until the edges are set and the center is slightly jiggly.
  8. Turn off the oven and leave the cheesecake inside with the door slightly ajar for about an hour.
  9. Let it cool at room temperature. Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
  10. Before serving, sprinkle toasted sliced almonds on top.

Notes

For best results, refrigerate overnight to allow flavors to meld. Prevent cracking by not overmixing and cooling slowly.
