Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet over medium heat, brown the ground beef with onions and bell peppers until cooked through. Drain excess fat.
- Stir in the beef broth, cream of mushroom soup, and mixed vegetables. Season with salt and pepper.
- Spread the beef mixture evenly in a baking dish.
- Top with cooked mashed potatoes, spreading them out evenly.
- Bake in the preheated oven for about 30-35 minutes, until heated through and slightly browned on top.
- Garnish with chopped parsley before serving.
