Ingredients

  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 1/2 cup butter, softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup grated apple
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the rolled oats, flour, baking soda, salt, and cinnamon.
  3. In another bowl, cream together the butter, brown sugar, and sugar until fluffy.
  4. Add the egg and vanilla, then mix well.
  5. Gradually add the dry ingredients to the wet mixture.
  6. Fold in the grated apple and nuts if using.
  7. Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes or until lightly golden.
  9. Let cool before transferring to a wire rack.
