- 2 cups rolled oats
- 1 cup flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 cup brown sugar
- 1/2 cup sugar
- 1/2 cup butter, softened
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup grated apple
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the rolled oats, flour, baking soda, salt, and cinnamon.
- In another bowl, cream together the butter, brown sugar, and sugar until fluffy.
- Add the egg and vanilla, then mix well.
- Gradually add the dry ingredients to the wet mixture.
- Fold in the grated apple and nuts if using.
- Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until lightly golden.
- Let cool before transferring to a wire rack.
Notes
Store in an airtight container at room temperature for up to a week. Can freeze for up to three months.
