- 8 oz pasta of your choice
- 1 can of artichoke hearts, drained and chopped
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 cup vegetable broth
- 1/2 cup parmesan cheese, grated
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add the chopped artichokes and vegetable broth to the skillet, stirring to combine. Cook for about 5-7 minutes, until heated through.
- Stir in the cooked pasta and grated parmesan cheese. Toss until the pasta is well coated.
- Season with salt and pepper to taste.
- Garnish with fresh parsley before serving.
Notes
For a creamier version, add a splash of heavy cream or cream cheese. You can mix in grilled chicken or shrimp for added protein.
