  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add the chopped artichokes and vegetable broth to the skillet, stirring to combine. Cook for about 5-7 minutes, until heated through.
  4. Stir in the cooked pasta and grated parmesan cheese. Toss until the pasta is well coated.
  5. Season with salt and pepper to taste.
  6. Garnish with fresh parsley before serving.

Notes

For a creamier version, add a splash of heavy cream or cream cheese. You can mix in grilled chicken or shrimp for added protein.
