Delicious baked chicken meatballs combined with a rich spinach Alfredo sauce.

Ingredients

  • 1 lb ground chicken
  • 1 cup ricotta cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground chicken, ricotta cheese, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper. Mix until well combined.
  3. Form the mixture into meatballs and place them on a baking sheet.
  4. Bake the meatballs in the preheated oven for 20-25 minutes, or until cooked through.
  5. While the meatballs are baking, prepare the spinach Alfredo sauce by heating heavy cream in a saucepan over medium heat.
  6. Add fresh spinach to the cream and cook until wilted.
  7. Stir in mozzarella cheese until melted and smooth.
  8. Once the meatballs are done, serve them topped with the spinach Alfredo sauce.

Notes

Serve with pasta, rice, or a bed of greens. Make sure to let leftovers cool before storing in the fridge.
