- 1 lb ground chicken
- 1 cup ricotta cheese
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup shredded mozzarella cheese
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine ground chicken, ricotta cheese, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper. Mix until well combined.
- Form the mixture into meatballs and place them on a baking sheet.
- Bake the meatballs in the preheated oven for 20-25 minutes, or until cooked through.
- While the meatballs are baking, prepare the spinach Alfredo sauce by heating heavy cream in a saucepan over medium heat.
- Add fresh spinach to the cream and cook until wilted.
- Stir in mozzarella cheese until melted and smooth.
- Once the meatballs are done, serve them topped with the spinach Alfredo sauce.
Notes
Serve with pasta, rice, or a bed of greens. Make sure to let leftovers cool before storing in the fridge.
