Instructions
- Preheat the grill.
- In a bowl, combine cubed chicken, diced bell peppers, red onion, and zucchini.
- Drizzle with olive oil and season with salt and pepper.
- Thread chicken and veggies onto skewers.
- Grill skewers for about 10-15 minutes, turning occasionally, until chicken is cooked through.
- Meanwhile, prepare the homemade herby ranch dressing by mixing ranch dressing with fresh herbs.
- Serve the skewers over a bed of greens and drizzle with the herby ranch dressing.
Notes
Soak wooden skewers in water for 30 minutes before grilling to prevent burning. Mix different vegetables for variety.
