Ingredients

  • 1 lb ground beef
  • 1 can enchilada sauce
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 2 cups cooked rice
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  3. Stir in enchilada sauce, black beans, corn, cooked rice, salt, and pepper.
  4. Pour half of the meat mixture into a greased casserole dish.
  5. Sprinkle half of the cheese on top.
  6. Add the remaining meat mixture and top with the rest of the cheese.
  7. Cover with foil and bake for 20 minutes, then uncover and bake for an additional 10 minutes until the cheese is bubbly and golden.
  8. Remove from the oven and garnish with chopped cilantro and green onions before serving.

Notes

You can customize this casserole with additional toppings like avocado or jalapeños.
