Delicious cookie bites with a soft, cake-like texture filled with creamy vanilla custard and topped with smooth chocolate.

Ingredients

  • 2 cups All-Purpose Flour (or whole wheat flour)
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/4 teaspoon Salt
  • 1/2 cup Unsalted Butter
  • 3/4 cup Granulated Sugar
  • 1 large Egg
  • 1 teaspoon Vanilla Extract
  • 1 cup Vanilla Custard
  • 1 cup Semi-Sweet Chocolate Chips
  • 2 tablespoons Vegetable Oil

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, mix the flour, baking powder, baking soda, and salt.
  2. In another bowl, cream together the butter and sugar until fluffy. Add the egg and vanilla, mixing well.
  3. Gradually stir the dry ingredients into the wet ingredients until just combined.
  4. Scoop small portions of the dough onto a baking sheet lined with parchment paper. Bake for about 10-12 minutes until the edges are set. Allow cookies to cool on a wire rack.
  5. Once cooled, cut a small hole in the middle of each cookie. Carefully fill each hole with vanilla custard.
  6. In a bowl, melt the chocolate chips with vegetable oil. Drizzle or spread the melted chocolate on top of each cookie.

Notes

Serve at room temperature for best flavor. Store in an airtight container at room temperature for up to three days, or refrigerate for up to a week.
