A quick and healthy meal combining tender chicken, fresh broccoli, and pasta in a garlic and olive oil sauce, perfect for busy weeknights.

Ingredients

  • 2 cups pasta (penne or fusilli)
  • 2 chicken breasts, diced
  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Grated parmesan cheese (optional)

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add diced chicken and season with salt and pepper. Cook until brown and cooked through.
  4. Add minced garlic and cook for 1 minute until fragrant.
  5. Stir in the broccoli and cook for 3-4 minutes until tender.
  6. Mix in the cooked pasta and toss everything together.
  7. Serve warm, topped with grated parmesan cheese if desired.

Notes

To store leftovers, let cool completely and place in an airtight container. Will stay good for up to three days.
