Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 2 cups peeled and chopped apples
  • 1 cup caramel sauce
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking pan.
  2. In a bowl, mix graham cracker crumbs and melted butter until well combined. Press the mixture into the bottom of the prepared baking pan to form the crust.
  3. In a large bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Add eggs one at a time, mixing well after each addition.
  4. Fold in the chopped apples, cinnamon, and salt. Pour the cheesecake mixture over the crust in the baking pan.
  5. Drizzle caramel sauce over the top of the cheesecake layer.
  6. Bake for 35-40 minutes, or until the edges are set and the center is slightly jiggly.
  7. Allow to cool, then refrigerate for at least 4 hours before cutting into bars. Serve chilled or at room temperature.

Notes

Make sure the cream cheese is softened before mixing for a smooth texture. Serve with extra caramel sauce or ice cream.
