Delightful cookies combining creamy cheesecake and rich caramel filling, soft and chewy with a chocolate chip option.

Ingredients

  • 1 cup cream cheese, softened
  • 1/2 cup butter, softened
  • 1 cup brown sugar
  • 1/2 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup caramel sauce
  • 1 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the cream cheese and butter until smooth.
  3. Add brown sugar, granulated sugar, egg, and vanilla extract; mix until fully combined.
  4. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the cream cheese mixture until combined.
  5. Fold in chocolate chips if using.
  6. Scoop tablespoon-sized portions of dough onto baking sheets lined with parchment paper.
  7. Press a small indentation into the center of each cookie and fill with caramel sauce.
  8. Bake for 12-15 minutes or until the edges are lightly golden.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store in an airtight container for up to a week at room temperature. Can freeze for up to three months.
