- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup salsa
- 2 cups shredded cheese
- 1 bag frozen tater tots
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Add taco seasoning and salsa to the beef, stirring to combine.
- In a baking dish, layer the beef mixture, black beans, and corn.
- Top with tater tots and sprinkle cheese over the top.
- Bake in the preheated oven for 25-30 minutes, or until the tater tots are golden brown and crispy.
- Let cool for a few minutes before serving.
Notes
Serve with fresh toppings like chopped tomatoes, sliced green onions, or sour cream. This dish reheats well for leftovers.
