Description
Soft, gooey cinnamon roll muffins with a brown sugar swirl and sweet glaze, perfect for breakfast or brunch.
Ingredients
Scale
2 cups all-purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/3 cup granulated sugar
1 cup buttermilk
1 egg
1/4 cup melted butter
1 tsp vanilla extract
Filling:
1/2 cup brown sugar
1 tbsp cinnamon
2 tbsp melted butter
Glaze:
1/2 cup powdered sugar
1–2 tbsp milk
1/2 tsp vanilla extract
Instructions
- Preheat oven to 375°F.
- Mix flour, baking powder, baking soda, salt, and sugar.
- In another bowl, combine buttermilk, egg, melted butter, and vanilla.
- Stir wet into dry just until combined.
- Mix filling: brown sugar, cinnamon, and melted butter.
- Fill muffin cups with batter, layer in filling, top with more batter and filling.
- Bake 15–18 minutes until golden.
- Cool slightly, drizzle with glaze, and serve.
Notes
Substitute yogurt for buttermilk if needed. Add nuts or chocolate chips for variation. Store in airtight container or freeze unglazed.
