Description

Soft, gooey cinnamon roll muffins with a brown sugar swirl and sweet glaze, perfect for breakfast or brunch.


Ingredients

Scale

2 cups all-purpose flour

2 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1/3 cup granulated sugar

1 cup buttermilk

1 egg

1/4 cup melted butter

1 tsp vanilla extract

Filling:

1/2 cup brown sugar

1 tbsp cinnamon

2 tbsp melted butter

Glaze:

1/2 cup powdered sugar

12 tbsp milk

1/2 tsp vanilla extract


Instructions

  1. Preheat oven to 375°F.
  2. Mix flour, baking powder, baking soda, salt, and sugar.
  3. In another bowl, combine buttermilk, egg, melted butter, and vanilla.
  4. Stir wet into dry just until combined.
  5. Mix filling: brown sugar, cinnamon, and melted butter.
  6. Fill muffin cups with batter, layer in filling, top with more batter and filling.
  7. Bake 15–18 minutes until golden.
  8. Cool slightly, drizzle with glaze, and serve.

Notes

Substitute yogurt for buttermilk if needed. Add nuts or chocolate chips for variation. Store in airtight container or freeze unglazed.
