- 2 chicken breasts
- 1 cup coconut milk
- 1 cup rice
- 1 cup chicken broth
- 1 tablespoon olive oil

Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion and minced garlic, sauté until fragrant.
- Season chicken breasts with salt and pepper, then add to the skillet. Cook until browned on both sides.
- Pour in the coconut milk and chicken broth. Bring to a simmer.
- Add rice, cover, and reduce the heat. Cook for about 15-20 minutes or until rice is tender and chicken is cooked through.
- Fluff the rice with a fork and garnish with fresh cilantro before serving.
Notes
For best results, season the chicken well and watch the rice to avoid overcooking. Fresh cilantro adds brightness, so be sure to include it!
