- 1 can coconut milk
- 4 cups vegetable broth

- 1 cup carrots, sliced
- 1 cup bell peppers, chopped
- 1 cup green peas
- Salt and pepper to taste
- Dumplings (store-bought or homemade)
- Fresh cilantro for garnish
Instructions
- In a large pot, sauté chopped onion, garlic, and ginger until fragrant.
- Add red curry paste and stir for a minute.
- Pour in the vegetable broth and coconut milk, and bring to a simmer.
- Add sliced carrots and bell peppers, and cook until tender.
- Stir in green peas and season with salt and pepper.
- Cook dumplings according to package instructions (or prepare homemade dumplings).
- Once dumplings are cooked, add them to the soup.
- Serve hot, garnished with fresh cilantro.
Notes
Adjust the amount of red curry paste based on spice preference. Use fresh vegetables for vibrant taste.
