  • 1 cup green peas
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté chopped onion, garlic, and ginger until fragrant.
  2. Add red curry paste and stir for a minute.
  3. Pour in the vegetable broth and coconut milk, and bring to a simmer.
  4. Add sliced carrots and bell peppers, and cook until tender.
  5. Stir in green peas and season with salt and pepper.
  6. Cook dumplings according to package instructions (or prepare homemade dumplings).
  7. Once dumplings are cooked, add them to the soup.
  8. Serve hot, garnished with fresh cilantro.
