1 cup cottage cheese
2 large eggs
2 tbsp honey or maple alternative (like date syrup)
1 cup all-purpose flour (or oat flour for a lighter version)
1 tsp baking powder
1 tsp vanilla extract
½ cup fresh blueberries
Pinch of salt
Instructions
Preheat oven to 350°F (175°C). Line a baking tray with parchment paper.
In a blender, mix cottage cheese, eggs, honey, and vanilla until smooth.
In a bowl, whisk flour, baking powder, and salt.
Fold the cottage cheese mixture into the dry ingredients until a fluffy batter forms.
Gently fold in blueberries, keeping a few for topping.
Spoon batter into a greased round pan or ramekins. Bake for 25–30 minutes until golden and puffed.
Let cool slightly, slice, and enjoy warm or chilled.
Notes
For a lighter version, use oat flour. To add zest, mix in 1 tsp lemon zest. Store leftovers in an airtight container in the fridge for 3 days or freeze up to 1 month.
