- 1 can black beans, rinsed and drained
- 1 can corn, drained
- 1 cup cherry tomatoes, halved
- 1 red bell pepper, diced
- 1/2 red onion, diced
- 1 avocado, diced
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- 2 tablespoons olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- In a large bowl, combine black beans, corn, cherry tomatoes, red bell pepper, red onion, avocado, and cilantro.
- In a separate small bowl, whisk together lime juice, olive oil, cumin, salt, and pepper.
- Pour the dressing over the bean mixture and toss gently to combine.
- Let the Cowboy Caviar sit for at least 30 minutes to allow the flavors to meld.
- Serve with tortilla chips or as a topping for tacos or salads.
Notes
Use ripe but firm avocado to maintain texture. The dish can be made a day in advance; just add the avocado just before serving.
