A bright, fresh mix of beans, corn, tomatoes, and avocado, perfect as a snack, side dish, or light meal.

Ingredients

  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 cup cherry tomatoes, halved
  • 1 red bell pepper, diced
  • 1/2 red onion, diced
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine black beans, corn, cherry tomatoes, red bell pepper, red onion, avocado, and cilantro.
  2. In a separate small bowl, whisk together lime juice, olive oil, cumin, salt, and pepper.
  3. Pour the dressing over the bean mixture and toss gently to combine.
  4. Let the Cowboy Caviar sit for at least 30 minutes to allow the flavors to meld.
  5. Serve with tortilla chips or as a topping for tacos or salads.

Notes

Use ripe but firm avocado to maintain texture. The dish can be made a day in advance; just add the avocado just before serving.
