Ingredients
2 tbsp olive oil
1 onion, finely chopped
1 red bell pepper, sliced
3 garlic cloves, minced
2 large chicken breasts, cooked and shredded
4 cups chicken broth
1 cup heavy cream (or half-and-half)
1 cup shredded cheddar cheese
2 tbsp Cajun seasoning (adjust to taste)
1 tsp smoked paprika
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions
Heat olive oil in a large pot over medium heat. Add onions, bell peppers, and garlic; sauté until softened and fragrant.
Stir in Cajun seasoning and smoked paprika, letting the spices toast briefly.
Add chicken broth and bring to a simmer. Stir in shredded chicken.
Lower the heat and stir in cream, followed by cheddar cheese until melted and smooth.
Season with salt and pepper to taste.
Serve hot, garnished with fresh parsley and extra Cajun spice if desired.
Notes
Toast the spices for deeper flavor. For convenience, use rotisserie chicken. Adjust thickness with extra broth or simmer longer.
