Ingredients
1 tablespoon olive oil
1 lb halal ground chicken or beef sausage
3 cloves garlic, minced
1 small onion, diced
2 carrots, peeled and sliced
4 cups chicken or vegetable broth (halal-certified)
1 cup heavy cream
9 oz cheese or spinach tortellini (halal-friendly)
2 cups baby spinach
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
Salt and pepper, to taste
Optional: red pepper flakes for heat
Instructions
Heat olive oil in a large pot over medium heat.
Add sausage and cook until browned, breaking it apart. Remove excess grease if needed.
Stir in onion, garlic, and carrots. Cook for 3–4 minutes until softened.
Add broth, basil, thyme, salt, and pepper. Bring to a gentle boil and simmer for 10 minutes.
Add tortellini and cook according to package instructions (4–6 minutes) until tender.
Reduce heat to low and stir in heavy cream and spinach. Simmer for 3–5 minutes until spinach wilts.
Serve hot, garnished with red pepper flakes or halal parmesan cheese.
Notes
Use spicy sausage for a kick or add extra vegetables for more nutrition. Adjust creaminess by varying the ratio of cream to broth.
