Instructions
- Heat 2 tablespoons of olive oil in a large pot over medium heat.
- Sauté the chopped onion, diced carrots, and diced celery until they become tender.
- Add 3 cloves of minced garlic and cook for an additional minute until fragrant.
- Pour in 4 cups of vegetable broth and bring the mixture to a boil.
- Incorporate the 4 cups of mixed vegetables and simmer for about 10-15 minutes, until everything is tender.
- Lower the heat and stir in 1 cup of heavy cream and 1 cup of shredded cheddar cheese, mixing until melted and well incorporated.
- Season with salt and pepper to taste before serving hot, garnished with fresh parsley.
Notes
