- 6 medium potatoes, peeled and cubed
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1 cup shredded cheese (optional)
- Bacon bits and green onions for garnish (optional)
Instructions
- Place the cubed potatoes, onion, garlic, broth, salt, pepper, and paprika in the crockpot. Mix everything well.
- Cover and set your crockpot to cook on low for 6-8 hours or high for 3-4 hours until the potatoes are tender.
- Use a potato masher to mash some of the potatoes for a creamy texture.
- Stir in the heavy cream and shredded cheese (if using) and cook for an additional 30 minutes.
- Serve hot, garnished with bacon bits and chopped green onions if desired.
Notes
This soup can be easily customized for vegetarian diets by using vegetable broth and omitting meat garnishes.
