A hearty and creamy potato soup made in a crockpot, perfect for chilly nights.

Ingredients

  • 6 medium potatoes, peeled and cubed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 cup shredded cheese (optional)
  • Bacon bits and green onions for garnish (optional)

Instructions

  1. Place the cubed potatoes, onion, garlic, broth, salt, pepper, and paprika in the crockpot. Mix everything well.
  2. Cover and set your crockpot to cook on low for 6-8 hours or high for 3-4 hours until the potatoes are tender.
  3. Use a potato masher to mash some of the potatoes for a creamy texture.
  4. Stir in the heavy cream and shredded cheese (if using) and cook for an additional 30 minutes.
  5. Serve hot, garnished with bacon bits and chopped green onions if desired.

Notes

This soup can be easily customized for vegetarian diets by using vegetable broth and omitting meat garnishes.
