- 1 lb ground beef or Italian sausage
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups chicken or vegetable broth
- 2 cups lasagna noodles, broken into pieces
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- Fresh basil for garnish
Instructions
- Brown the ground beef or Italian sausage in a large pot over medium heat.
- Add the chopped onion and minced garlic; sauté until softened.
- Stir in crushed tomatoes, broth, broken lasagna noodles, oregano, and basil. Season with salt and pepper.
- Bring to a boil, then reduce heat and simmer for about 15 minutes, stirring occasionally.
- Fold in ricotta and half of the mozzarella cheese until melted.
- Serve with remaining mozzarella and fresh basil as garnish.
Notes
This soup stores well and can be made in advance. It can also be customized for vegetarian diets.
