A comforting soup that combines the flavors of classic lasagna in a warm, hearty dish perfect for family dinners.

Ingredients

  • 1 lb ground beef or Italian sausage
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 2 cups lasagna noodles, broken into pieces
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • Fresh basil for garnish

Instructions

  1. Brown the ground beef or Italian sausage in a large pot over medium heat.
  2. Add the chopped onion and minced garlic; sauté until softened.
  3. Stir in crushed tomatoes, broth, broken lasagna noodles, oregano, and basil. Season with salt and pepper.
  4. Bring to a boil, then reduce heat and simmer for about 15 minutes, stirring occasionally.
  5. Fold in ricotta and half of the mozzarella cheese until melted.
  6. Serve with remaining mozzarella and fresh basil as garnish.

Notes

This soup stores well and can be made in advance. It can also be customized for vegetarian diets.
