Ingredients
– 1½ cups (190g) all-purpose flour
– 2 tablespoons sugar
– 1 tablespoon baking powder
– ½ teaspoon salt
– 1¼ cups (300ml) milk
– 1 large egg
– 3 tablespoons melted butter
– 1 teaspoon vanilla extract (optional)
– Butter or oil for cooking
Instructions
Mix the dry ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and salt.
Combine the wet ingredients: In another bowl, mix the milk, egg, melted butter, and vanilla extract if using.
Make the batter: Pour the wet ingredients into the dry ingredients. Stir gently until just combined. It’s okay if the batter is a bit lumpy.
Let it rest: Allow the batter to sit for 5–10 minutes. This step is optional but helps make the pancakes fluffier.
Cook the pancakes: Heat a nonstick pan or griddle over medium heat and lightly grease with butter or oil. Pour about ¼ cup of batter for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1–2 minutes until golden brown.
Serve and enjoy: Stack the pancakes on a plate and serve with your favorite toppings like maple syrup, fresh fruit, or a pat of butter.
Notes
For extra fluff, don’t overmix and let the batter rest.
