A delightful dish of caramelized onions, melted cheese over juicy chicken breasts, perfect for busy weeknights.

  • Total Time: 50 minutes
  • Yield: 4 servings

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 1 cup mozzarella cheese, shredded
  • 1 cup beef broth

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Add olive oil to a skillet over medium heat and sauté the onions until caramelized, about 15-20 minutes.
  3. Season the chicken breasts with garlic powder, thyme, salt, and pepper.
  4. Place the seasoned chicken in a baking dish and pour the beef broth over it.
  5. Top the chicken with the caramelized onions and mozzarella cheese.
  6. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is bubbly.

Notes

For best results, caramelize the onions thoroughly for deeper flavor. Feel free to try different cheese types or add cooked mushrooms.
