Ingredients

  • Turkey Breast (Bone-in or Boneless, about 3-5 pounds)
  • Unsalted Butter (½ cup, softened)
  • Fresh Rosemary (2 tablespoons, chopped)
  • Fresh Thyme (2 tablespoons, chopped)
  • Fresh Sage (1 tablespoon, chopped)
  • Fresh Parsley (2 tablespoons, chopped)
  • Garlic (3 cloves, minced)
  • Lemon Zest (1 teaspoon)
  • Salt (1 ½ teaspoons)
  • Black Pepper (1 teaspoon)
  • Olive Oil (1 tablespoon)

Instructions

  1. Preheat your oven to 375°F (190°C) and pat the turkey breast dry.
  2. In a medium bowl, mix the softened butter with rosemary, thyme, sage, parsley, garlic, lemon zest, salt, and pepper until well combined.
  3. Drizzle olive oil on the turkey and spread the herb butter all over the turkey breast, including under the skin if possible.
  4. Roast in the preheated oven for 1 hour and 15 minutes to 1 hour and 45 minutes, or until the internal temperature reaches 165°F (74°C).
  5. Remove from oven and tent with foil for 15-20 minutes before carving to allow juices to redistribute.
  6. Slice against the grain and serve. Enjoy with your choice of sides.

Notes

Ensure your butter is really soft to mix well with the herbs. Use a meat thermometer to check the turkey’s doneness.
