Ingredients

  • 8 oz fettuccine pasta
  • 1 lb lean ground beef
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 cups fresh spinach
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the fettuccine in salted boiling water according to package instructions until al dente. Drain, reserving 1 cup of pasta water.
  2. In a large skillet over medium heat, brown the ground beef while breaking it into small pieces. Season with salt and pepper until fully cooked.
  3. Push the beef to one side and sauté the minced garlic for about one minute until fragrant.
  4. Stir in the heavy cream and gradually add the Parmesan cheese, mixing continuously until smooth.
  5. Add the spinach and let it wilt into the sauce, scraping up any flavorful bits from the bottom.
  6. Combine the cooked fettuccine with the creamy beef mixture, adding reserved pasta water to reach desired consistency. Serve hot.

Notes

Leftovers reheat well in a skillet or microwave. You can add pepper or extra cheese before serving.
