Ingredients

  • 1 1/2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup sweetener of choice (erythritol, stevia, etc.)
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup sugar-free strawberry jam
  • 1/4 cup powdered sweetener (for icing)
  • 1 tablespoon almond milk (for icing)

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
  2. Combine almond flour, coconut flour, sweetener, salt, and baking powder in a large bowl.
  3. Add softened butter, egg, and vanilla extract; mix until a dough forms.
  4. Divide the dough in half and press one half into the bottom of the prepared baking dish.
  5. Spread the sugar-free strawberry jam over the crust.
  6. Roll out the second half of the dough and place it over the jam, sealing the edges.
  7. Bake for 20-25 minutes or until golden brown.
  8. Let cool, then mix powdered sweetener and almond milk to create icing; drizzle over the top.
  9. Cut into bars and serve.

Notes

Store in an airtight container at room temperature for up to five days. Refrigerate for up to a week or freeze for a month.
