Ingredients

  • 1 1/2 cups almond flour
  • 2 tablespoons coconut flour
  • 1 tablespoon erythritol (or preferred sweetener)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 large egg (for dough)
  • 1 large egg (for egg wash)
  • 1 tablespoon melted butter
  • Coarse salt (for topping)
  • 1/2 cup hot water
  • 1 tablespoon baking soda

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Combine almond flour, coconut flour, erythritol, baking powder, and salt in a mixing bowl. Mix well.
  3. Beat 1 egg in a separate bowl and melt the butter. Add to the dry ingredients and mix until a dough forms.
  4. Mix hot water and baking soda in another small bowl until dissolved.
  5. Divide dough into 8 equal parts and roll each into a rope shape. Form them into pretzel shapes.
  6. Dip each pretzel in the baking soda water mixture for a few seconds, then place on the baking sheet.
  7. Brush with the beaten egg and sprinkle with coarse salt.
  8. Bake for 10-12 minutes until golden brown.
  9. Let cool slightly before serving.

Notes

For best results, ensure almond flour is finely ground and roll dough ropes evenly. Experiment with different toppings.
