- 2 tablespoons coconut flour
- 1 tablespoon erythritol (or preferred sweetener)
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 large egg (for dough)
- 1 large egg (for egg wash)
- 1 tablespoon melted butter
- Coarse salt (for topping)
- 1/2 cup hot water
- 1 tablespoon baking soda
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Combine almond flour, coconut flour, erythritol, baking powder, and salt in a mixing bowl. Mix well.
- Beat 1 egg in a separate bowl and melt the butter. Add to the dry ingredients and mix until a dough forms.
- Mix hot water and baking soda in another small bowl until dissolved.
- Divide dough into 8 equal parts and roll each into a rope shape. Form them into pretzel shapes.
- Dip each pretzel in the baking soda water mixture for a few seconds, then place on the baking sheet.
- Brush with the beaten egg and sprinkle with coarse salt.
- Bake for 10-12 minutes until golden brown.
- Let cool slightly before serving.
Notes
For best results, ensure almond flour is finely ground and roll dough ropes evenly. Experiment with different toppings.
