Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Whisk together the flour, baking powder, baking soda, and salt in a bowl.
  3. Cream the butter and sugar in a separate bowl until light and fluffy.
  4. Add the eggs one at a time, then mix in the lemon zest, lemon juice, and vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk, mixing just until combined.
  6. Fold in the poppy seeds.
  7. Pour the batter into the prepared cake pan and smooth the top.
  8. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
