Instructions
- Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
- Whisk together the flour, baking powder, baking soda, and salt in a bowl.
- Cream the butter and sugar in a separate bowl until light and fluffy.
- Add the eggs one at a time, then mix in the lemon zest, lemon juice, and vanilla extract.
- Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk, mixing just until combined.
- Fold in the poppy seeds.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
