Ingredients

  • 1 lb fresh fish (haddock or cod), cut into chunks
  • 1 lb shrimp, peeled and deveined
  • 1 cup scallops
  • 4 cups fish stock
  • 2 cups heavy cream
  • 1 cup diced potatoes
  • 1 cup diced onions
  • 1 cup diced celery
  • 1 cup diced carrots
  • 2 cloves garlic, minced
  • 2 tbsp butter
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the onions, celery, carrots, and garlic, and sauté until the vegetables are tender.
  3. Add the diced potatoes and fish stock, and bring to a boil.
  4. Reduce heat and simmer until the potatoes are cooked through.
  5. Stir in the heavy cream, fish, shrimp, and scallops.
  6. Add thyme, salt, and pepper, and cook until the seafood is cooked through.
  7. Serve hot, garnished with fresh herbs if desired.
