- 2 tablespoons milk
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix the flour, baking soda, cinnamon, and salt.
- In another bowl, cream the butter, brown sugar, and granulated sugar together until light and fluffy.
- Beat in the egg and vanilla.
- Gradually add the dry ingredients to the wet ingredients, then stir in the oats.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes until the edges are golden. Let cool.
- For the filling, beat together confectioners’ sugar, butter, milk, and vanilla until smooth.
- Spread the filling between two cookies to make a sandwich. Enjoy your oatmeal cream pies!
