  • 1 teaspoon vanilla extract (for filling)
  • 2 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the flour, baking soda, cinnamon, and salt.
  3. In another bowl, cream the butter, brown sugar, and granulated sugar together until light and fluffy.
  4. Beat in the egg and vanilla.
  5. Gradually add the dry ingredients to the wet ingredients, then stir in the oats.
  6. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes until the edges are golden. Let cool.
  8. For the filling, beat together confectioners’ sugar, butter, milk, and vanilla until smooth.
