A simple and tasty one-pan dish featuring juicy chicken breasts, cherry tomatoes, and melted cheese, all brought together with tangy balsamic vinegar.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup cherry tomatoes, halved
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large baking dish, place the chicken breasts and season with salt and pepper.
  3. Drizzle balsamic vinegar and olive oil over the chicken.
  4. Scatter cherry tomatoes around the chicken.
  5. Bake for about 25 minutes, or until the chicken is cooked through.
  6. Remove from the oven, sprinkle mozzarella cheese on top, and bake for an additional 5 minutes until the cheese is melted.
  7. Garnish with fresh basil before serving.
