- 4 boneless, skinless chicken breasts
- 1 cup cherry tomatoes, halved
- 1 cup mozzarella cheese, shredded
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a large baking dish, place the chicken breasts and season with salt and pepper.
- Drizzle balsamic vinegar and olive oil over the chicken.
- Scatter cherry tomatoes around the chicken.
- Bake for about 25 minutes, or until the chicken is cooked through.
- Remove from the oven, sprinkle mozzarella cheese on top, and bake for an additional 5 minutes until the cheese is melted.
- Garnish with fresh basil before serving.
Notes
Serve with rice or a fresh salad for a complete meal. Leftovers can be refrigerated for up to 3 days.
