Description

A warm, comforting peach cobbler made with juicy peaches and a buttery topping, perfect for summer evenings.


Ingredients

6 cups fresh or canned sliced peaches (drained if using canned)

1 cup granulated sugar (plus 1 tbsp for topping)

1/2 cup brown sugar

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1 tbsp lemon juice

2 tsp cornstarch

1 cup all-purpose flour

1 tsp baking powder

1/2 tsp salt

1/2 cup unsalted butter (melted)

1 cup milk


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, mix peaches with granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Let it sit while you prepare the batter.
  3. In another bowl, combine flour, baking powder, salt, milk, and melted butter until smooth.
  4. Pour the peach mixture into a greased 9×13-inch baking dish.
  5. Spoon the batter evenly over the top. It’s okay if some fruit peeks through.
  6. Sprinkle the remaining tablespoon of sugar on top for added crunch.
  7. Bake for 40-45 minutes or until the top is golden and the filling is bubbling.
  8. Let it cool slightly before serving.

Notes

Use fresh or canned peaches. Add nuts or berries for variety. Best served warm with ice cream.
