Ingredients

  • 2 tablespoons garlic, minced
  • 1 tablespoon paprika
  • 1 tablespoon cumin
  • 1 teaspoon oregano
  • Juice of 2 limes

  • 2 tablespoons olive oil
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, mix garlic, paprika, cumin, oregano, lime juice, salt, pepper, and olive oil to create a marinade.
  3. Rub the marinade all over the chicken, ensuring it’s well coated.
  4. Place the chicken in a roasting pan and roast in the oven for about 1 hour, or until the chicken is cooked through and the juices run clear.
  5. Garnish with fresh cilantro before serving.

Notes

For richer flavor, marinate the chicken for at least 2 hours or overnight. You can use a meat thermometer to check for an internal temperature of 165°F (75°C).
