Instructions

  1. Cream together the softened butter, sugar, and brown sugar in a large bowl until fluffy.
  2. Add the pumpkin puree and egg, mixing well to combine.
  3. In a separate bowl, whisk together the flour, baking soda, baking powder, spices, and salt.
  4. Gradually add the dry ingredients to the wet ingredients until just combined; be careful not to overmix.
  5. Chill the dough in the refrigerator for at least 2 hours.
  6. Preheat your oven to 350°F (175°C) when ready to bake.
  7. In a small bowl, mix together the sugar and cinnamon for coating.
  8. Scoop out the chilled dough and roll it into balls, coating each ball in the cinnamon-sugar mixture.
