- 2 medium sweet potatoes, diced
- 1 lb brussels sprouts, halved
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1/4 cup chopped fresh parsley (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the diced sweet potatoes and halved brussels sprouts.
- Drizzle with olive oil and sprinkle with garlic powder, salt, and pepper. Toss to coat.
- Spread the mixture evenly on a baking sheet.
- Bake for 25-30 minutes, or until the sweet potatoes are tender and slightly caramelized.
- Remove from the oven and sprinkle with fresh parsley if desired before serving.
Notes
Cut sweet potatoes into similar sizes for even cooking and check at 20 minutes to turn them if needed.
