Ingredients

  • 1 cup Unsalted Butter (softened)
  • 1 cup Granulated Sugar
  • 1/2 cup Brown Sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla Extract
  • 2 cups All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 8 ounces Cream Cheese (room temperature)
  • 1/2 cup Additional Butter (room temperature)
  • 2 cups Powdered Sugar
  • 12 ounces Caramels
  • 1/4 cup Milk
  • 1 teaspoon Salt (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, beat the softened unsalted butter, granulated sugar, and brown sugar together until creamy.
  3. Add the eggs and vanilla extract, mixing well.
  4. In another bowl, combine the all-purpose flour and baking soda. Gradually add this to the wet mixture.
  5. Soften the cream cheese and additional butter in a separate bowl, then mix in the powdered sugar until smooth.
  6. Add caramel pieces to the cookie dough and mix gently.
  7. Scoop out spoonfuls of dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes or until the edges are lightly browned.
  9. Remove from oven and let cool slightly before adding a sprinkle of salt on top.

Notes

Store leftovers in an airtight container at room temperature for up to five days. Dough can be frozen before baking.
