Ingredients

  • 1 can of tuna, drained
  • 1/4 cup mayonnaise
  • 1/4 cup shredded cheese (cheddar or mozzarella)
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 2 large eggs
  • 1 cup shredded zucchini or cauliflower (optional)
  • Salt and pepper to taste
  • Cooking spray or oil for the waffle maker

Instructions

  1. Mix together the drained tuna, mayonnaise, cheese, Dijon mustard, garlic powder, and onion powder.
  2. Beat the eggs in another bowl and stir in the shredded zucchini or cauliflower if using.
  3. Combine the tuna mixture with the egg mixture and mix well. Season with salt and pepper.
  4. Preheat the waffle maker and lightly grease it with cooking spray or oil.
  5. Pour the tuna mixture into the waffle maker and close the lid. Cook according to the manufacturer’s instructions until the chaffle is golden brown and crispy.
  6. Carefully remove the chaffle and serve warm, optionally with a side salad or low-carb dipping sauce.
