Instructions

  1. Pat the scallops dry thoroughly using paper towels, then season with salt and pepper on both sides.
  2. Heat olive oil in a skillet over medium-high heat. Add scallops in a single layer and sear for about 2 minutes per side, until a golden crust forms. Remove from skillet and set aside.
  3. Reduce heat to medium and melt the butter in the same pan. Add minced garlic and cook for about 30 seconds until fragrant.
  4. Stir in Cajun seasoning and paprika, then pour in the heavy cream. Let it simmer for 3 to 4 minutes until slightly thickened.
  5. Add the Parmesan cheese and stir until melted and the sauce is creamy. Adjust seasoning to taste.
  6. Return scallops to the pan, spoon sauce over them, and warm through for about 1 minute.
  7. Garnish with chopped parsley and serve hot.
