- 4 boneless, skinless chicken breasts
- 1 cup baby carrots
- 1 cup broccoli florets
- 1 cup bell peppers, sliced
- 1/2 cup unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon salt

- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 lemon, sliced
Instructions
- Place the chicken breasts at the bottom of the slow cooker.
- Add the baby carrots, broccoli florets, and bell peppers on top of the chicken.
- In a microwave-safe bowl, melt the butter and stir in the minced garlic, salt, pepper, thyme, and rosemary.
- Pour the garlic butter mixture over the chicken and veggies.
- Top with lemon slices.
- Cover and cook on low for 6-8 hours or on high for 4 hours, until the chicken is cooked through and tender.
