Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup baby carrots
  • 1 cup broccoli florets
  • 1 cup bell peppers, sliced
  • 1/2 cup unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 lemon, sliced

Instructions

  1. Place the chicken breasts at the bottom of the slow cooker.
  2. Add the baby carrots, broccoli florets, and bell peppers on top of the chicken.
  3. In a microwave-safe bowl, melt the butter and stir in the minced garlic, salt, pepper, thyme, and rosemary.
  4. Pour the garlic butter mixture over the chicken and veggies.
  5. Top with lemon slices.
  6. Cover and cook on low for 6-8 hours or on high for 4 hours, until the chicken is cooked through and tender.
