Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup cream cheese, softened
  • 1 cup fresh strawberries, chopped
  • 1/2 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
  3. Add the eggs and vanilla extract, mixing well.
  4. In another bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. In a separate bowl, beat the cream cheese and powdered sugar until smooth.
  7. Fold in the chopped strawberries into the cookie dough.
  8. Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
  9. Make a small indentation in the center of each cookie and fill it with the cream cheese mixture.
  10. Bake for 12-15 minutes or until the edges are lightly golden.
  11. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Use ripe but firm strawberries and do not overmix the flour to keep cookies soft.
