A rich, cheesy side dish made with soft sliced potatoes, cream, and two cheeses for a warm, creamy bake.

Ingredients

  • 2 pounds of potatoes, peeled and sliced
  • 1 cup of heavy cream
  • 1 cup of shredded cheddar cheese
  • 1/2 cup of grated Parmesan cheese
  • 1/4 cup of butter
  • 1 teaspoon of garlic powder
  • Salt and pepper to taste
  • Chopped chives for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large pot, boil the sliced potatoes until tender, about 10-15 minutes.
  3. Drain the potatoes and return them to the pot.
  4. Add the heavy cream, cheddar cheese, Parmesan cheese, butter, garlic powder, salt, and pepper to the potatoes.
  5. Mix until well combined and the cheese is melted.
  6. Transfer the potato mixture to a greased baking dish.
  7. Bake in the preheated oven for 25-30 minutes, or until golden and bubbly.
  8. Garnish with chopped chives before serving.

Notes

Use a mix of cheeses for different flavors and feel free to add cooked mushrooms or onions for extra depth.
