- 4 chicken thighs
- 1 cup apple cider
- 2 tablespoons apple cider vinegar
- 2 tablespoons honey
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- 1 small cabbage, shredded
- 2 carrots, grated
- 1 apple, thinly sliced
- 1/4 cup mayonnaise
- 1 teaspoon lemon juice
- 1/4 cup chopped walnuts (optional)
Instructions
- In a bowl, whisk together apple cider, vinegar, honey, Dijon mustard, salt, and pepper to create the marinade.
- Add chicken thighs to the marinade and let them sit for at least 30 minutes.
- Preheat the oven to 375°F (190°C).
- Place marinated chicken thighs on a baking sheet and roast for about 25-30 minutes, or until cooked through.
- In a large bowl, combine shredded cabbage, grated carrots, sliced apple, mayonnaise, lemon juice, and walnuts (if using). Mix well to make the slaw.
- Serve the sticky apple cider chicken alongside the autumn slaw.
Notes
For the best flavor, allow the chicken to marinate longer. Use fresh apple cider and adjust the sweetness of the marinade to your preference.
