A warm and hearty soup combining the comforting flavors of traditional stuffed cabbage rolls, filled with ground meat, rice, and tender cabbage.

Ingredients

  • 1 head of cabbage, chopped
  • 1 pound ground beef or turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 4 cups beef or chicken broth
  • 1 cup rice
  • Salt and pepper to taste
  • 1 tablespoon paprika

Instructions

  1. In a large pot, brown the ground beef or turkey with the chopped onion and minced garlic. Drain excess fat.
  2. Add in the chopped cabbage, diced tomatoes, broth, and rice. Season with salt, pepper, and paprika.
  3. Bring the mixture to a boil, then reduce heat and simmer for about 20-30 minutes, or until the cabbage is tender and the rice is cooked.
  4. Serve warm, garnished with fresh herbs or a dollop of sour cream if desired.
