- 2 pounds sweet potatoes
- 1/2 cup sugar
- 1/2 cup milk
- 1/4 cup butter
- 2 eggs
- 1 teaspoon vanilla extract
- 1 cup miniature marshmallows
- 1/2 cup chopped pecans
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
Instructions
- Preheat the oven to 350°F (175°C).
- Boil the sweet potatoes until tender, then drain and mash.
- In a mixing bowl, combine the mashed sweet potatoes, sugar, milk, butter, eggs, vanilla, salt, and cinnamon. Mix until well combined.
- Pour the mixture into a greased casserole dish.
- Top with miniature marshmallows and chopped pecans.
- Bake in the preheated oven for 25-30 minutes, until the marshmallows are golden brown.
- Serve warm.
Notes
Use fresh sweet potatoes for the best flavor. You can adjust the sweetness by adding more or less sugar based on your preference.
