- 1 pound sweet potatoes
- 1 cup all-purpose flour (add more if needed)
- ½ teaspoon salt
Instructions
- Prick the sweet potatoes with a fork and microwave for 7 to 10 minutes until tender.
- Cut them in half, scoop out the flesh, and mash it in a bowl.
- Add the flour and salt, and mix first with a spoon, then with your hands.
- Transfer the mixture to a lightly floured worktop and knead for a minute until you have a compact, soft dough.
- Cut the dough into 4 pieces, roll into long ropes, and cut into small pillow-shaped gnocchi.
- Cook the gnocchi in salted boiling water for 1 to 2 minutes or until they float to the surface.
- Remove with a spider or slotted spoon and add to your favorite sauce.
Notes
Serve with butter sauce, olive oil, or marinara. You can store uncooked gnocchi in the freezer for up to 2 months.
