  • 1 can (28 oz) diced tomatoes
  • 1 packet taco seasoning
  • 2 cups beef or chicken broth
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, tortilla chips

Instructions

  1. Brown the Meat: In a large pot over medium heat, cook the ground beef or turkey alongside the chopped onion until browned. Be sure to drain any excess fat.
  2. Combine Ingredients: Add the black beans, kidney beans, corn, diced tomatoes, taco seasoning, and broth to the pot. Stir everything together to ensure even distribution of flavors.
  3. Bring to a Boil: Increase the heat to bring the mixture to a boil. Once it’s bubbling, reduce the heat and allow the soup to simmer for about 30 minutes. Stir occasionally to keep it from sticking.
