- 1 lb ground beef or turkey
- 1 onion, chopped
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (28 oz) diced tomatoes
- 1 packet taco seasoning
- 2 cups beef or chicken broth
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, tortilla chips
Instructions
- Brown the Meat: In a large pot over medium heat, cook the ground beef or turkey alongside the chopped onion until browned. Be sure to drain any excess fat.
- Combine Ingredients: Add the black beans, kidney beans, corn, diced tomatoes, taco seasoning, and broth to the pot. Stir everything together to ensure even distribution of flavors.
- Bring to a Boil: Increase the heat to bring the mixture to a boil. Once it’s bubbling, reduce the heat and allow the soup to simmer for about 30 minutes. Stir occasionally to keep it from sticking.
- Season to Taste: After simmering, season your Taco Soup with salt and pepper to taste, adjusting to your family’s preference.
- Serve and Garnish: Ladle the soup into bowls and serve hot. Garnish with your choice of toppings such as shredded cheese, a dollop of sour cream, or crunchy tortilla chips for added texture.
