Ingredients
1 ½ cups graham cracker crumbs
¼ cup granulated sugar
½ tsp cinnamon
½ cup unsalted butter, melted
24 oz cream cheese, softened
1 cup granulated sugar
3 large eggs
½ cup sour cream
½ cup reduced apple cider
2 tbsp all-purpose flour
1 tsp vanilla extract
½ tsp ground cinnamon
¼ tsp ground nutmeg
1 ½ cups apple cider (reduced to ½ cup)
Instructions
Preheat oven to 325°F (163°C). Grease a 9-inch springform pan and line with parchment.
Mix graham cracker crumbs, sugar, cinnamon, and melted butter. Press into pan and bake 10 minutes.
Beat cream cheese until smooth. Add sugar, cinnamon, nutmeg, and flour. Mix in eggs one at a time. Stir in sour cream, vanilla, and reduced apple cider.
Pour filling over crust. Bake 60–70 minutes until edges set and center jiggles. Turn off oven, crack door, and cool 1 hour.
Chill at least 4 hours or overnight.
Top with whipped cream, cinnamon sugar, or caramel before serving.
Notes
Reduce apple cider for bold flavor. Don’t overbake. Chill overnight for best results.
