- 1 lb shrimp, peeled and deveined
- 2 cups zucchini noodles
- 1 cup cherry tomatoes, halved
- 4 cloves garlic, minced
- 1/4 cup olive oil
- 1/4 cup fresh parsley, chopped
- 1 lemon, juiced
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add minced garlic and sauté until fragrant.
- Add shrimp and cook until pink and opaque.
- Stir in cherry tomatoes and zucchini noodles, cooking until just tender.
- Remove from heat and stir in lemon juice and parsley.
- Season with salt and pepper to taste.
- Serve warm in bowls and enjoy!
Notes
For extra brightness, serve with a lemon wedge. Add toasted pine nuts or almond slices for crunch if desired.
