Ingredients

- 1 lb chicken breast
- 4 cups chicken broth
- 1 cup carrots, sliced
- 1 cup celery, chopped
- 1 cup spinach, chopped
- 2 cloves garlic, minced
- 1 onion, chopped
- 1 tsp thyme
- 1 tsp parsley
- Salt and pepper to taste
Instructions
- Heat a little oil over medium heat in a large pot.
- Add onions and garlic, sauté until translucent.
- Add chicken breast and cook until browned; remove from pot and set aside.
- In the same pot, add chicken broth, carrots, celery, thyme, and parsley. Bring to a boil.
- Reduce heat and add the chicken back to the pot.
- Simmer for 20 minutes or until the chicken is cooked through.
- Stir in spinach and season with salt and pepper.
- Serve hot.
Notes
For best flavor, use fresh vegetables. This soup is great with a slice of bread or a side salad.
