A light and nourishing Chicken Detox Soup that’s easy to prepare and packed with flavor, perfect for any day.

Ingredients

  • 1 lb chicken breast
  • 4 cups chicken broth
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 1 cup spinach, chopped
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 1 tsp thyme
  • 1 tsp parsley
  • Salt and pepper to taste

Instructions

  1. Heat a little oil over medium heat in a large pot.
  2. Add onions and garlic, sauté until translucent.
  3. Add chicken breast and cook until browned; remove from pot and set aside.
  4. In the same pot, add chicken broth, carrots, celery, thyme, and parsley. Bring to a boil.
  5. Reduce heat and add the chicken back to the pot.
  6. Simmer for 20 minutes or until the chicken is cooked through.
  7. Stir in spinach and season with salt and pepper.
  8. Serve hot.

Notes

For best flavor, use fresh vegetables. This soup is great with a slice of bread or a side salad.
